自制腊肉(夏天版)

步骤 1

五花肉不能用水洗,用白酒揉搓清洗一下,备用。

酱油水:锅中放入糖、盐、八角、桂皮、香叶、花椒、老抽、酱油,小火激发一下香味。糖融化了就可以关火晾凉后倒出。

(懒的上火融化糖直接用也行,味道没有啥区别)

(这个是我近期补的图片,用了六斤肉,所以料比例有增加)

(不用煮开,煮开花椒有苦味儿)

酱油水里加入35克左右白酒,放入肉揉按摩抓匀。

放入保鲜袋,或者保鲜膜封口,放入冰箱冷藏三四天。

(每天把保鲜袋或者把肉翻个身,让肉的腌制更均匀)

三四天后取出,把表面大料花椒扒拉扒拉,稍微擦干表面水分

我还刻意多弄了一些去皮五花肉~

挂上钩子在通风处晾晒,我晾晒了两周左右。

(因为我是夏天做的腊肉,所以晚上时候把腊肉放入冰箱冷藏一夜,第二天早上再挂出去,我自己的感觉口感比秋冬做的腊肉口感更好!)

两周左右取出,切开看看成色如何。

肉皮也可以用喷枪烧一下,再把肉皮表面上烧焦的黑刮干净,再用清水或碱水清洗一下

冷水下锅,焯水,水开后煮2分钟左右,去一下咸淡,然后再放蒸锅蒸20分钟,就可以吃啦。

也可以直接放入蒸锅,蒸30分钟,我更喜欢直接蒸的。

(直接蒸能最大程度锁住腊肉的咸香和油润口感。水煮会让腊肉的风味物质、盐分流失,肉质变柴;

直接蒸时,蒸汽能温和加热,让腊肉慢慢变软,咸香更浓郁。蒸前可先用温水快速冲洗表面灰尘,无需浸泡。)
